once a domain has expired ownership goes back to nominet. It is usually 3 months before it is released again. it is just a matter of keeping an eye open for it with the domain sellers until it become available, there is no way of reserving it is a matter of 1st come 1st served once it is released. Knowing the domain name that you want will give you an edge over the competitors but people can find out on "who is" when domains expire and some webmaster will use software to search for the availability of high end domains.

It was suggested to me that it is not a good idea to put a hyphen in a domain name

I purchased a new domain without hyphens.
Only because I was sick of explaining to people what a hyphen was when I was giving our email/web address out.
