Contract with a barring clause to keep him out of the area for a reasonable time after he left. If it was done rite upfront.
The better way would be to, if he was good and a reliable sort that could be a threat to your business help set him up as a partner in a branch of your business. But make him work for the privilege
Question him about him knowledge of business and put the fear of God into him with questions and doughty. Ask him does think him he will never survive in these times with out my support..
Just a after thought He might think his bosss is on this forum?

He may well know his boss is on this forum. But if he aint going to be up front about it..........

Don't be too hard on him, most employees want to be their own boss at some time.  ;)
