250litre upright, thats what i had.

if you have a escort 75 you can carry extra weight, so you could have 4 spare jerry cans with water in them

sod having a 400L tank in an escort they handle bad as it is, add the tank weight to 400l makes it about 450kg thats with out you, fuel, hoses, pumps, poles ladders ect ect your asking for trouble with that size tank in a small van IMO
250l tops

I wouldn't bother with a 250 litre vertical tank either unless you fancy getting seasick. The Escort 55 vans struggle as it is.
A horizontal 250 litre tank is a much better choice.

I had a 250 litre upright and a flat tank installed at different times, the upright was much better as the flat I found was a bit wobbly when you came to a juntions and you could feel the water moving about more and the tank was baffled,my escort had a 500 payload so had to be carefull with other bits and bobs like ladders,me and fuel to consider.

That's interesting cos i also had both tanks when i had escort van. My experience was the opposite of this. I ended with getting a flat tank and i found it was better.
The only advantage i found with the upright was that i could use more water from the tank before it dipped below the exit pipe.

Stick a 1000l tank in and carry some 25l barrels incase you run out. ;) ;) ;)

Just dont drive it anywhere or lie underneath it.
