Commercial Kitchen Ventilation Cleaning

Just been asked to clean an extraction system in a hotel, they are basically wanting the fans and surrounding areas cleaned,
What do people use for this type of cleaning?
We have an Osprey Deepclean Vega Plus 8 bar steamer but when I've tried it on heavily carbonised deposits it's not the best.

used to clean loads of these,mainly burger king,for quick easy clean,use spray on paint stripper,and dont forget to wear mask and goggles.spray it on wait 30 secs and simply wipe off.

That's interesting, how do you use it? Will it get rid of even the heavily carbonised deposits on the fan vent?
Is it Nitromors diluted down or is there a spray on version that you can buy?
Also how is this perceived when using it in a food preparation/cooking environment?
