If you are going to do the backs and seats i would look at 5 mins a seat.

As the job goes on you will slow down a bit so 5 mins will be fine long as its just a clean and not including chewing gum etc :)

Jana,
forgive me for been presumtious , but I am assuming you have no knowledge what so ever regarding upholstery cleaning from what you are suggesting "hiring a steamer".
Have you checked the fabric to be cleaned ?
What fabric is it ? what solutions are you going to clean them with ? etc etc,

From my experience cinema seating tends to be a of a velour, draylon , polyester micro fibre types.
Using a steamer as you put it , would infact cause serious distortion and tooling marks.
I would suggest contacting a local pro and let him survey , price and clean with yourself taking a small percentage.
