Ideal van for 2 men 800 or 1000 litre tank respectively

Yes and no you need the kerb/ unladen weight which seems impossible to get for transits!

If in doubt, take it on weigh bridge. There’s a list of public ones somewhere.
You’ll be surprised how much stuff adds up, dont forget there’s weight limits for each axle.
