pre spray with a strong detergent, agitate, then rinse with mild detergent, acidic rinse or just hot water (imagine cleaning a pan after a fry up) mmmmmm Bacon

It all depends on just how much cooking oil was spilt...if its gone into the backing, underlay and possibly subfloor you may get continual wick back unless you are able to deal with the lot

May be a replacement job

Remove as much excess oil as possible with a dull knife or spoon. This will make it more easy to treat the area of the fabric that is stained.Apply liquid detergent to the stained area. Most liquid laundry detergents are able to remove grease, but for tough stains you may need to try a liquid dish soap.

Oil stains are by far some of the worst to tackle on carpets, and using harsh chemical solutions can often make things worse. If in doubt call in the experts; it may well work out cheaper than having to completely replace your carpets.
