Customer poaching staff

Good morning all,
We have a commercial customer who has cancelled, informing us they are managing their own cleaning staff internally, which I don't have a problem with. However, they have offered our staff the job, which implies they have been conspiring for a few weeks. I suspected there was something not quite right as our staff refused to take part in a training course, which they would have been paid for.
This means the client is in breach of our T's & C's and the staff are in breach of their employment contract. I firmly believe this also highly unethical and am surprised a doctors surgery would behave this way.

The question I ask is do you think it is worth taking legal action against all parties concerned and has anyone had any success in this area?
