I've seen a pressure washer on eBay (not that I want to buy) that has a conversion so you can use the engine as a generator.

How easy is this to do? I've got a spare PW that I could potentially do this to as my generator will die sooner or later.

Chris Scott should be able to help you. If I remember correctly you need a different output shaft, how easy or hard that is I cannot say...

"Usually" generators are tapered shafts...your (engine) will be "q" shaft so it's not really feasible.
 Just buy a generator...
I also think that the generator/pressure washer on ebay is not what it seems as it defo does not have a 6.5kva 240v alternator on it!
