You only need to worry about damp carpets if their is a hard floor running directly off it and is a danger to customers slipping. Just use your common sense, a lot depends on the type of carpet, if they are low profile which is unlikely, bonneting may be the best option if they are like domestic carpets which most have been for me then HWE will probably the best way to go.
These jobs are all about the planning you do ahead of the work Ie what times do they have meals if you are cleaning the restaurant/bar areas, is their any functions or weddings on, not working in rooms to early with HWE so that you don't wake up customers ect.
If you are working on rooms find out how many rooms their are first if you are cleaning them all and ask them how many they can allocate at one time without too much disruption. If the rooms are quite bad you can easily do 10 twin rooms in a day with a helper with HWE. The most I have done in a day ( on my own i might add ) is 14 double rooms that were absolute mingers, nearly killed me off though!
Ask them when the quietest days are for occupancy and book in accordingly. I have found Sundays and early Mondays the best. Try to get a master key/card for a batch of rooms each time and get a helper to spot and pre-spray in front of you and budget for far more drink/coffee stain spotters than you think. You need to make sure they don't allocate rooms you have cleaned until they are dry, if a customer or cleaner slips on the tiled bathroom floor it's you who is going to get it in the neck so make sure their is a system in place were the rooms get time to dry.
Other things you could do are to try and get all the rooms that they can free up for you in batches are on the same floor, their is nothing worse than cleaning the rooms all over the place, especially if their are no lifts!
Also if they show you a room to quote bear in mind they will show you the cleanest room by far and will tell the other rooms are occupied so you only get to see that one
