Client calls to book says I would a regular weekly clean, I say yes no problem the price will be say "example" £50.00. Client is happy with that they sign on
One cleaning day all goes well home very dirty, but we clean and it sparkles...
next week no booking.
How do you prevent this from happening - Really they are getting a one off clean at the price of a regular and I am convinced they know and are finding ways to get a clean which should really be £150 or more as a one off clean

Just an idea why can you take 4 cleans up front and if any one asks why tell what happend here

You say "they sign on" do you mean they sign a contract. If so then that should stipulate the terms and conditions, if not then that is what you need. I would highlight the cost of the contract cleans and also the cost of a one off clean.

Why not do what the window cleaners do and charge more for a first clean. Obviously a first clean of anything is going to take more time and effort than a second or third clean, so charge accordingly. Then when they come back for the secong/third/fourth clean make it normal rate as it wont take as long. If they dont come back you havent lost out because you charged decent money.

I say it's x amount of £ then if you have me back again it's y amount (although most my customers are yearly, so it keeps me in the loop when they want a clean next year, a sort of loyalty discount

change your contract to a rolling contract with 1 months notice to cancel and stipulate if cancelled within 3 months the cost of the initial clean is chargeable at a reducing cost each month and put the cost of the initial clean on your proposal with the monthly cost this will get rid of the chancers.
