I have really dirty pan that I cannot clean, what is the best substance to dissolve the harden black years of grilling in the bottom of the grill and a frying pan the same....

Depends if you prefer standard cleaning chemincals from local supermarket etc or would prefer a more natural cleaning agent.
Depending how bad it actually is, most oxygen based reactory chemical cleaning agents from DIY stores should be enough. Just make sure you soak it well after to remove any traces of the chemicals.
