when doing a lot of stores you dont expect to get paid quickly, it was a big bulk of work so soon mounts up, also maybe i trusted him too much, so when he says he will pay i thought he would, obvious now i know that i should have maybe stopped sooner, but i had a lot of long conversations over the phone and he did seem genuine,

Very strong Comments to put on a forum especially from someone who hides his own contact details.

Not saying what you are saying is true or untrue but in my opinion/experience it might be better to take legal action before stating on an open forum whats happened.

you can take him to small claims for £25 i think, it helps if you have some form of agreement ie emails stating work you were completing for him, he will have to file or pay.

if he disputes he files and you can both go to court and explain your side

That's no good is it. Have you spoken to any debt collection companies about it to see if they can do anything about it? Proper ones i mean not ones that just send letters and try and scare you. I know a fella from a past business that i had that specialized in commercial debts....all above board.
