Two. Just fill tank with tap water & have the two vessels after your pump. Pressure will not be affected.

Well its just the way i have it set up at the moment,i suppose this way limits me if i run out of water at a customesrs.

I tried putting the DI after the pump but got pressure issues. Without the DI's it stops in 1 second, however with double DI it was taking up to 30 seconds to dead-end.
I took them out the van!

You have air in the vessels which is compressing. A quick blast with the pump on full pelt should shift it but if it doesn't you can take the vessel heads off & fill to the top with tap water. A quick blast now & then should sort the issue.

Use the tap water to clean! Have you actually tried it at that tds. Plenty of rinsing mind!

Have not tried cleaning with tds of 21 but may give it a go and see what happens,would save on Resin
