Canopy extractor Clean Pizza shop

Hello, I have been asked by my local take away pizza shop to clean his large alluminium extractor.  He says the filters have been clean just need to clean the greasy hood down, any advise on what working procedure to take cleaning working on ladders, I have some cater clean solution that cuts through grease but need to be carful with your eyes and skin so spraying might be tricky? any info would be helpful and not sure about using a cloth or dispossable blue towel roll? what length of time and price would you quote for a 15ft canopy with chippy grease etc  ???

I use baby oil on aluminium just a light rubbing onc cleaned of grease , on a rag thts what i was told. It btings my ali canopy up good.

In a previous life i used o be a chef  for 15 years so i've cleaned lots of these.
Ladder etc it depends what below the canopy, i'd try and work off that as there will be allot of scrubbing involved.
It's not an easy space to clean and You will find yourself bending over backwards.
The grease sticks to the canopy, probably quite  thick if they are getting you into clean it.
You will need to spray something to cut through the grease,  you may need a scrapper.
There is generally a ledge all the way around that's full of grease.
As for time it's hard to say without seeing it, but whatever your thinking you can probably double it!!
As for baby oil do not use this in an industrial kitchen it's a breading ground for bacteria not good  :'(

I've done 4 of these this week as I'm a certified ducting cleaner. You need to be careful with these as if there is a fire in the extract system you can be liable. Companies issue a certificate to say the canopy and ducting, fans etc have been cleaned to a good standard and that the fire risk has been removed. If you need anymore give me a shout.
