I'd disagree - we never take on anyone with experience, too many bad habits etc..To reply properly would take a while, and then it's only the way we have done it, which may not suit you, try searching the site for employing threads. In many respects, successfully employing someone is more about you than them.Having the right kind of personality to be "the boss" - to motivate & encourage whilst still laying down the rules - to handle the extra stress that comes with even the best employees - to be up to date with all the regulations & requirements - to put systems in place for relatively simple "common sense" things that a new employee might not understand - to be uber organized and maximise the profit your employee makes for you - and to simply handle the added responsibility and potential liabilities that come along with employing - - - if you can get your own act together properly in these regards then you'll be able to train in and deal with a wider range of characters & finding the "right person" will be less of a challenge.
