Old Terrazzo grind it or not

Seem to get a few domestic enquiries for 'old terrazzo' probably turn of the century and a bit newer. They are often in situ and despite that they are not totally flat - As the title says is it worth grinding these floors or just go over with an agressive resin bond. The issue with them seems to be over the years they discoloured as they have been lurking under carpets. Had a play around with a few via resin diamonds under a slow speed rotary but as they are a bit wavey the machine tends to 'skip' Anyone know what is the best way to get the best out of them?

I would either grind and polish or strip and seal depending on their budget and preference.

Thinking of grinding it - can't upload a picture on here now for some reason but it has a fair few repairs to do.
