you will also have to find out of they are HACCP which is set down by the Food standards agency for food processing/preaprartion areas and will have to be HACCP yourself. It is a minefield to go into, as at the end of the day the general public are at risk if cleanliness programmes are not followed. As for potential customers who "cannot afford" much....stick well clear, these will defo be ones that do not follow the guidelines and put their own customers at risk, which just may lead to......blame the cleaners
