Employment contract

I was told a few years ago by somebody who attended a business course

That by law you have to have a contract of employment.

They said that you could say for instance, guarantee the person at least 20hrs a week at your chosen hourly rate.

With extra hours available most weeks up to 40hrs or more.

This was of interest because Holiday pay and sick pay are based on the contracted hours 20, the extra hours been overtime.
